Reconditioned cheese cutter/mixer/cooker with stainless steel bowl and lid and high speed cutter Three-phase motor mounted beneath the bowl, 1500/3000 rpm. The main product bowl is double jacketed, with ports for injection of steam direct into the bowl. The skid mounted stainless steel control panel is connected to the Stephan cooker and all probes, steam valves and functions of the system. The main lid has 3 manual tightening clamps with a top mounted slow turning surface agitator. The cooker has with a remote mounted (water cooled) vacuum pump with water separator. The system is provided with a (vacuum) manometer, open/close valve, overpressure valve on the bowl, pneumatic outflow valve, steam regulation valve (closes automatically at certain temperatures) that opens after resetting and a steam carbonic filter.
